Tender and Simple Chicken Chow Mein
Although not one of the prettiest dishes you'll see, this is one of the famous comfort foods of the 'other East', Asia. One taste of this easy dish and yoiu will see why so many of our Eastern friends make this mutltiple times a week, and have done so for generations. Although many chow mein recipes include a myriad of other ingredients, I find bean sprouts satisfying, both in taste, bulk and nutrionally. Taste yet another great comfort food with this perfectly seasoned chow mein.

- 1/4 cup(s) soy sauce
- 2 tablespoon(s) cornstarch
- 2 tablespoon(s) oil
- 1 small onion, thinly sliced or julienned
- 2 ribs celery, thinly sliced
- 1 teaspoon(s) minced garlic in oil
- 1 (6-ounce)chicken breast, chopped
- 1 (7-ounce)package fresh bean sprouts(4 cups)
- 1 cup(s) chicken broth
- 1 tablespoon(s) brown sugar
Tender and Simple Chicken Chow Mein Directions
- In a small bowl, whisk together soy sauce and cornstarch until smooth, set aside. In a large skillet over medium heat, add oil, onion, celery and garlic to the pan and stir to combine. Cook, stirring frequently, until the everything is just cooked, about 6-8 minutes. Add the chicken and continue to cook and stir an additional 4-8 minutes(depending on the size of the cut chicken) or until chicken is done throughout. Raise the heat to medium-high and add bean sprouts. "Stir-fry" until the sprouts are softened, about 3-5 minutes. Add soy sauce mixture, broth and brown sugar. Continue cooking and stirring until thickened and hot throughout, about 2-3 minutes. Remove to serve immediately.
