Sticky Sweet and Smoky Rice Pilaf
I don't know if Sticky Sweet should be in the same sentence when referring to a Rice Pilaf, but this side dish is truly a great combination of sweet and salty, which is what everyone and their mother is into nowadays. I am only recently enjoying the vast array of different sweetnesses and saltinesses(are these words appropriate as well?) that can be obtained with your imagination. I think our New England palates have enjoyed the combination of these two senses when we first began adding salt to our apples. Heck, we have been adding salt to crabapples for generations, but that is yet another combination of Sour and Salty.
Anyway, I love this recipe and I think you will enjoy my touch of sweet maple syrup saddling right up alongside the smoky flavor of bacon.

- 2 slices bacon, minced
- 1/2 onion, minced
- 1/4 cup(s) maple syrup
- 2 cup(s) rice
- 4 cup(s) chicken broth
- 1 cup(s) frozen peas
Sticky Sweet and Smoky Rice Pilaf Directions
- In a large saucepan, over medium heat, saute bacon until crispy, stirring frequently.
- Add the rice and onion, continue cooking and stirring until onions are soft, about 3-4 minutes.
- Add the maple syrup, stir to combine and cook an additional 2 minutes.
- Add the chicken broth and peas, bring to a boil, reduce heat to low and cover. Simmer for 30 minutes. Do not remove lid!
- At the end of 30 minutes, lift the lid to make sure all liquid has been absorbed. Fluff with a fork, season with salt and pepper and serve hot.
- What to enjoy with this purely Yankee side? I think some spicy grilled chicken, some poached firm-fleshed white fish or even as is with a side of pickled vegetables.
